Recipe - Cedar Smoked Citrus Salmon

Serves 6 1/4 cup Diana Sauce - Honey Dijon or Honey Garlic 2 tbsp lemon juice 2 tsp chopped chives (approx.) 2 tsp each melted butter and honey 1 tsp finely grated lemon zest 1/2 tsp each salt, pepper and hot pepper flakes (optional) 1kg boneless salmon fillet 1 Cedar grilling plank NB: Soak your Western Red Cedar plank for 2hrs before cooking. Preheat the grill to high. Stir Diana Sauce with the lemon juice, chives, butter, honey, lemon zest, salt, pepper and hot pepper flakes (if using).     Place the grilling plank over high heat and preheat for 5-10mins or until wood begins smoking. Brush half of the sauce mixture over the salmon fillet. Place the fish on the plank and cook covered for 15-17 minutes or until the salmon is cooked but slightly pink in the centre. Brush with the remaining glaze during the last 5 minutes of cooking.     Garnish with additional chives.

Most foods have a best before date. You can still eat foods for a while after the best before date as they should be safe but they may have lost some quality. Foods that have a best before date can legally be sold after that date provided the food is fit for human consumption. The only food that can have a different date mark on it is bread, which can be labelled with a baked on or baked for date if its shelf life is less than seven days. Foods that have a shelf life of two years or longer, e.g. some canned foods, do not need to be labelled with a best before date. This is because it is difficult to give the consumer an accurate guide as to how long these foods will keep, as they may retain their quality for many years and are likely to be consumed well before they spoil.
